Cheese Biscuits
Combine these 4 ingredients into a bowl:
2 cups 500 ml flour
4 tsp. 20 ml baking powder
2 tbsp 30 ml sugar
3/4 tsp 4 ml salt
Add
1 cup 250 ml grated old cheddar cheese then stir.
Mix together:
1/3 cup 75 ml vegetable oil
3/4 cup 200 ml milk
Add to bowl with dry ingredients and stir to form a soft ball of dough.
(Use more milk if needed to make dough soft.) Turn out on floured board and knead gently 8 - 10 times.
Roll or pat dough to 1 inch thick and cut with biscuit cutter.
Place on ungreased pan close together.
Bake in 425 F (220 C) oven for 15 minutes until nicely browned.
Serve warm with butter or plain. Enjoy!
Bran Flax Muffins
Combine in a large bowl
1 ½ cup flour
3/4 cup ground flaxseed
3/4 cup oat bran
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
½ tsp salt
2 tsp cinnamon
Add and stir in:
1 ½ cup finely shredded carrots
2 apples peeled & shredded
½ cup raisins
1 cup chopped nuts (walnuts/peanuts/almonds/etc)
Combine together:
3/4 cup milk
2 eggs beaten
1 tsp vanilla
2 tbsp vegetable oil
Pour liquid ingredients into dry ingredients and stir until moistened - do not over mix.
Fill muffin cups 3/4 full. Bake at 350 F for 15 - 20 minutes.
